Once finished, this will look like regular mayonnaise, but it will have an amazing flavor, silkiness, and extra richness from the avocado oil. This mayo makes an excellent base for sauces such as Turmeric Ranch Dressing.
Yield: 1 1/2 cups homemade mayo
Time: 1 hour plus 15 minutes
- One Egg
- ¼ tsp salt
- ¼ tsp mustard
- 1 tbls apple cider vinegar
- ¼ cup plus 1 cup avocado oil
Crack egg and add vinegar to a bowl or food processor. Allow ingredients to come to room temperature together, about an hour or more is fine. Do not attempt to microwave or otherwise hurry the process; it won’t work (speaking from personal experience here).
Add the ¼ cup oil, mustard, and salt and blend thoroughly with processor or immersion blender to combine, about two minutes.
Now SLOWLY add the 1 cup avocado oil and blend constantly to form the creamy colloidal goodness that is homemade mayo. Take your time, it will take five minutes or more if done correctly. You should hear the difference in consistency about midway through the oil addition.
