I am a super fan of green beans, and I always have been. Unfortunately in my earlier years that meant I ate lots of canned green beans (shudder). I have since reformed my ways and tonight, I found the tastiest application yet for fresh and amazingly tasty green beans. Another plus is that they look super fancy and will totally impress people. I ate them earlier with grilled lamb steak and a delectable horseradish coconut cream and highly recommend it!
Yield: 2-4 servings, depending on size
Time: 10 minutes prep, 10 minutes cook time
- 1lb of fresh green beans (can be frozen ahead of time)
- 2 cloves garlic, diced
- ½ cup sliced onion (about ¼ of an onion)
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp avocado (or other compliant) oil
- 1 tsp balsamic vinegar
Clean and cut the ends off fresh green beans, chop in half if desired. Dice garlic and slice onion.
Heat a skillet on the stove to medium and add all ingredients. Sautee for 5-10 minutes until desired consistency is reached, stirring occasionally. Plate and serve.
