Marinated Tomato Salad

This recipe will made you feel fancy and make any family or guests think you are a master chef when really it is a very easy throw-together salad. The flavors are bold, juicy, and herby – can be passed as either Mediterranean or Italian.  It can be eaten immediately, and tastes even better if marinated for a few hours or eaten as leftovers the next day. This heirloom salad pairs wonderfully with grilled chicken or my quick lamb shoulder chops and cauliflower tabbouleh!

Yield: 6 servings

Time: 15 minutes prep


  • 5 medium heirloom tomatoes, roughly chopped into smallish pieces
  • ½ onion, diced
  • 1 clove garlic, diced
  • 2 tbs balsamic vinegar
  • 1 tbs avocado (or other compliant) oil
  • 1 tsp sweet basil
  • ½ tsp salt
  • ½ tsp pepper


Combine all ingredients and toss lightly to coat.
