If you have any problems eating cauliflower over and over on Whole30 but you enjoy the richness and spice of Indian flavors, this is the recipe for you! This dish also has the added benefit of having minimal ingredients and an easy roasting method. I suggest paring this with my Crockpot Green Curry Chicken for a full and flavorful meal.

Time: 10 minutes prep, 15 minutes cooking time
- Whole head cauliflower
- 1 tbs lime juice
- 1 tsp Madras curry powder
- 1 tsp avocado oil
Preheat oven to 425F. Clean and chop the cauliflower to a size of your liking and toss with lime juice and oil. Line a baking sheet with parchment paper and lay out cauliflower in a single layer. Dust with curry powder and roast for about 20 minutes, or until it has a char/softness you like.
