If you’re looking for a super flavorful protein with a pop of some savory veggies without a lot of work, read on! With only a few ingredients and one pan, you can feel like a kitchen whiz by impressing everyone at the table (or just hoard a few days’ worth of leftovers for yourself). I suggest pairing this with my avocado cream sauce with spaghetti squash or garlicky parsnip mash.
Yield: 3-4 servings
Time: 5 minutes prep, 35 minutes cook time
- 1 tsp avocado oil
- 1 lb chicken breast, diced to your liking
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 onion, diced
- 1 tsp tarragon
- ½ tsp sea salt
- 1 tsp pepper
- ½ cup balsamic vinegar
Heat oil in a large pan on medium heat until hot. Put chicken breast in pan and cook through, stirring around occasionally, for about 10 minutes.
Add all other ingredients, reduce heat to medium-low, and cover. Let simmer for 15-20 minutes before serving to meld flavors.
